Oh my GOODNESS!
Billy's Chili-Mac Salad
Creamy and tangy pasta salad with a just a hint of spice.
1 pound elbow macaroni
2 celery ribs minced
1 red bell pepper seeded and minced
1/4 red onion minced
1/4 cup sweet pickle relish
1 cup mayonaisse
1 TBS Billy's Chili Original Chili Mix
2 tsp granulated sugar
1 1/2 TBS Dijon mustard
Kosher salt and fresh ground pepper
Cook pasta according to package directions. Drain and set aside to cool.
In a large bowl add the celery, red bell pepper, red onion, sweet pickle relish, mayonnaise, sugar, Dijon mustard. Add a dash of kosher salt and freshly ground black pepper. Mix well.
Add in the macaroni and toss until evenly coated. Season with more salt and pepper to taste and refrigerate for 1 hour before serving.
